Aunt Bina’s Abade Priscos Pudding

Braga is a city with great attractions and one of them is, without a doubt, its traditional sweets: many of which are typical conventual sweets, but the highlight is definitely the Abade Priscos Pudding.

This recipe belonged to Abbot Joaquim Manuel Rebelo, and is called Abade Priscos Pudding precisely because this man was, during the 19th century, an abbot in Priscos, one of Braga’s parishes.

And it was precisely in Priscos where we found Albina, who we prefer to call Aunt Bina, due to the hospitality with which she welcomed us into her home, and where she prepared the pudding while telling us stories about the famous Abbot, who was well known for his culinary skills – he was even summoned to cook for the royal family whenever they visited the Northern part of the country.

During one of those feasts cooked for the King, it is said that one day the Abbot decided to grind a bundle of straw in order to obtain a very fine batter, which he later used in fillings and sauces for the meal he prepared especially for D. Luís. At the end of the meal, the king was extremely pleased and sent for the Abbott. After congratulating him and inquiring what made his dishes so delicious, the Abbot replied:

"- It was straw, Your Highness". Extremely surprised, D. Luís asked: "- Straw? You gave the King straw!?" The Abbot hung his head and clarified with a smirk: -" Forgive me, Your Highness! But... everyone eats straw: the trick is knowing how to prepare it."

During our fun conversation, Aunt Bina also showed us clippings of old documents and the original pudding recipe that was given to her. She revealed to us that the confection of the pudding didn’t always go well: only over time and with the correct interpretation of the recipe was she able to perfect it. Just like the Abbot used to say "the pudding is a cinch to make, but hard to get right." However, Aunt Bina always nails it and has already won the best Abade Priscos Pudding award twice to prove it.
